Rich chocolate bread pudding with a decadent, fudgy center is a luxurious twist on the family classic. This warm, comforting dessert delivers intense chocolate satisfaction in every spoonful.
Preheat the oven to 350°F (175°C) and generously butter a 9x13 inch baking dish with 1 tbsp of softened butter.
Cut the challah bread into 1-inch cubes and allow to air-dry on a tray for at least 30 minutes for best texture.
In a saucepan over medium-low heat, combine milk, cream, half the sugar, and bittersweet chocolate. Stir constantly until the chocolate melts and the mixture is smooth, then remove from heat.
In a large bowl, whisk together eggs, remaining sugar, vanilla extract, and salt. Gradually whisk in the warm chocolate mixture to create a custard base.
Add the bread cubes to the bowl and fold gently so every piece is soaked. Let sit for 20 minutes, stirring once halfway to ensure even absorption.
Pour the mixture into the prepared baking dish, dot with the remaining 2 tbsp butter, and bake uncovered for 40–45 minutes until the center is just set but still jiggles slightly.
Allow to cool for at least 15 minutes before serving warm for a fudgy texture, or longer for a firmer slice.
