Spiral-ridged pasta with broccoli, garlic, and chili in a simple olive oil sauce. This vegetarian mediterranean dish is a fresh, clean eats family meal loaded with vitamins and fiber.
Bring a large pot of salted water to a boil. Add tortiglioni and boil for 9–10 minutes until al dente, stirring occasionally to prevent sticking.
Meanwhile, heat extra virgin olive oil in a large skillet over medium heat. Add sliced garlic cloves and red pepper flakes; sauté for 1–2 minutes until fragrant but not browned.
Add broccoli florets to the boiling pasta pot for the final 3 minutes of pasta cooking. Stir to blend with the pasta.
Reserve 1 cup of the pasta water, then drain pasta and broccoli together.
Add the drained pasta and broccoli directly to the skillet with the garlic oil. Over medium-high heat, toss everything for 2–3 minutes, gradually adding pasta water as needed to create a silky sauce. Season with salt and black pepper.
Remove from heat and fold in half the parmesan cheese. Serve topped with the remaining parmesan and extra chili flakes if desired.
