Chicken is simmered with astragalus root for a strengthening, immune-boosting medicinal soup. This high protein family tonic is one of the most popular wellness soups in Chinese herbal tradition.
Rinse the bone-in chicken pieces under cold water, then blanch them in boiling water for 3 minutes to remove impurities. Drain and set aside.
Add 10 cups of fresh water to a large stockpot. Place the chicken pieces, astragalus root slices, fresh ginger, and scallions into the pot.
Bring the soup to a gentle boil over medium heat, then immediately reduce heat to low and skim off any foam. Cover and simmer for 90 minutes, stirring once midway.
Add dried goji berries and season with salt and white pepper. Continue to simmer for another 30 minutes on low heat.
Remove the astragalus root and scallions, then taste and adjust seasoning if necessary. Serve the hot soup, ensuring each bowl gets both broth and tender chicken.
