Candied fruits in spicy mustard syrup from Cremona add piquant contrast to cheese and boiled meats. This unique mediterranean condiment transforms simple dishes into memorable family meals.
In a large nonreactive bowl, layer the prepared fruits and sprinkle with all the sugar. Cover with plastic wrap and refrigerate overnight to draw out juices.
The next day, gently transfer fruit and syrup to a wide saucepan. Add water and lemon juice. Bring to a gentle simmer over low-medium heat without stirring vigorously, for about 15 minutes.
Remove from heat. Allow the fruit mixture to cool completely. Cover and refrigerate for another 12–24 hours to further combine flavors.
Repeat simmering gently for another 15 minutes the following day, ensuring fruit pieces stay intact; avoid boiling rapidly to preserve shape and texture.
Once cooled, stir in the mustard essence, distributing evenly. Transfer the mostarda to sterilized glass jars, seal tightly, and let rest at least 48 hours before serving for best flavor.
