Heat olive oil in a large skillet over medium heat, add diced onion, and sauté until translucent, about 3 minutes.
Add farro and cook for 2 more minutes, stirring constantly to toast the grains.
Pour in 1 cup of vegetable broth and stir, allowing farro to absorb most of the liquid before gradually adding more broth, one cup at a time, over 20–25 minutes.
Stir in chopped zucchini halfway through cooking and continue stirring; maintain gentle simmering heat.
Once farro is nearly tender, add shrimp to the pan and cook until pink, about 3–4 minutes, then mix in parmesan, lemon zest, salt, and pepper; finish with basil before serving.
