Moong Dal Pakora is an iconic Indian snack that delivers satisfying crunch and authentic spiced flavors. This vegetarian treat is a family favorite that's perfect for tea time and casual entertaining.
Rinse and soak the moong dal in room temperature water for at least 3 hours, then drain thoroughly.
Transfer soaked dal to a blender, add ginger, and blend to a coarse paste using as little water as needed for thick consistency.
In a mixing bowl, combine the dal paste, chopped onion, green chilies, cilantro, cumin seeds, red chili powder, garam masala, baking soda, and salt. Mix well to aerate and lightly whip the batter.
Heat oil in a deep pan over medium heat (350°F). Test by dropping a bit of batter; it should sizzle and rise steadily.
Scoop small portions (about 1-2 tbsp) of the batter and carefully drop into hot oil. Fry in batches to avoid overcrowding. Fry each batch 4–5 minutes, turning occasionally, until golden and crisp.
Remove pakoras with a slotted spoon onto paper towels. Serve hot with your favorite chutney.
