Pan-fried tofu is stir-fried with pork, vegetables, and doubanjiang in a bold, homey Sichuan sauce. Rich in protein and full of warming spice, this family-style dish is everyday Chinese comfort food at its best.
Pat tofu dry and cut into 1-inch cubes. Heat 2 tbsp neutral oil in a large nonstick pan over medium-high heat. Arrange tofu cubes in a single layer and pan-fry until golden brown on all sides, about 6–8 minutes. Remove and set aside.
Add remaining 2 tbsp oil to the pan. Sauté ginger, garlic, and white parts of scallions over medium-high heat until fragrant, about 1 minute.
Increase heat to high. Add ground pork, breaking it up, and stir-fry until it loses pink color and begins crisping, about 3 minutes.
Add doubanjiang and stir-fry for 1 minute until oil is red and fragrant. Add onions and red bell pepper, stir-frying for another 2 minutes.
Return tofu to the pan. Pour in soy sauce, Shaoxing wine, sugar, and water. Simmer for 2 minutes, allowing flavors to meld.
Stir cornstarch into a splash of water to make a slurry. Add to the pan, gently stirring to thicken the sauce and coat the tofu evenly. Simmer for 1 more minute.
Turn off heat. Drizzle with toasted sesame oil and top with chopped scallion greens. Serve hot with steamed rice.
