Sarson ka saag is a Punjabi winter classic made with mustard greens, spinach, and fresh butter. This healthy vegetarian dish is rich in iron and vitamins, perfect for clean eats and family gatherings.
Rinse and roughly chop mustard greens, spinach, and radish greens. Combine in a large pot with 3 cups of water and bring to a boil over medium-high heat.
Reduce heat to low, cover, and simmer the greens for 30 minutes until tender, stirring occasionally to maintain even moisture.
Add chopped ginger, garlic, green chili, and onion to the pot. Simmer uncovered for another 10 minutes, stirring to incorporate flavors.
Sprinkle in cornmeal slowly while stirring constantly to prevent lumps. Continue to cook for 15 more minutes on low heat, stirring often so the saag does not stick to the bottom.
Add salt, turmeric, and red chili powder; then blend the mixture with an immersion blender or mash well for a coarse, rustic texture.
In a small pan, melt butter over medium heat. Pour the hot butter over the saag, stirring well to finish the dish with aromatic flavor. Serve immediately, garnished with a pat of butter if desired.
