Preheat your oven to 350°F (175°C). Line a loaf pan (or 9x5-inch baking dish) with parchment paper; do not grease.
Separate the egg whites and yolks. In a clean bowl, beat egg whites with a pinch of salt until soft peaks form.
Gradually add sugar to the whites, beating until glossy and stiff peaks hold, about 3–5 minutes on medium speed.
Add yolks one at a time, mixing gently after each, then fold in vanilla extract. Sift in flour and gently fold with a spatula until just combined, taking care not to deflate the batter.
Pour batter into prepared pan, smoothing the top. Bake immediately on the center rack for 30–35 minutes, or until golden and a toothpick inserted comes out clean. Let cool in pan for 10 minutes before transferring to a rack to cool completely.
