Peking duck with lacquered skin carved tableside is the ultimate celebration dish. A high protein, family feast with fresh pancakes and elegant presentation.
Pat the duck dry, removing excess moisture. Using a pump or straw, carefully separate the duck skin from the meat with gentle air pressure for crispiness.
Brush the duck all over with rice vinegar, then hang or place it in front of a fan for at least 2 hours to dry and tighten the skin.
Mix honey, soy sauce, and five spice powder. Brush this glaze evenly over the dried duck skin, then let stand for 30 more minutes for a lacquer finish.
Preheat the oven to 425°F. Place the duck breast-side up on a rack over a pan. Roast for 15 minutes, then reduce heat to 350°F and roast for about 60–75 minutes, basting with honey glaze twice.
Let the duck rest for 15 minutes. With a sharp knife, carve thin slices of duck skin and meat tableside. Serve immediately with Chinese pancakes, hoisin sauce, sliced scallions, and cucumber.
To assemble: Spread hoisin sauce onto a pancake, add duck, scallion, and cucumber, then wrap and enjoy.
