Crispy-bottomed guotie potstickers with juicy pork filling are a classic comfort food. A high protein, family dinner favorite with fresh, savory flavor.
In a large bowl, combine ground pork, finely chopped green cabbage, chopped scallions, sesame oil, soy sauce, Shaoxing wine, grated fresh ginger, sugar, white pepper, and salt. Mix until well incorporated and slightly sticky.
Set out the potsticker wrappers and place about 1 tablespoon of filling in the center of each. Moisten the wrapper edges with water and fold, pressing to seal tightly and pleating as desired.
Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Arrange half the potstickers, pleat-side up, in the pan, ensuring they do not touch.
Cook uncovered for 2-3 minutes until the bottoms are light golden brown. Carefully pour 1/4 cup water into the pan, then cover immediately to trap steam.
Reduce heat to medium-low and steam for 5-6 minutes. Remove the lid and cook another 2 minutes or until the bottoms are crisp and golden. Repeat with the remaining oil and potstickers. Serve hot.
