Sweet pineapple chunks, shrimp, and cashews are stir-fried with curry-scented rice, often served in a carved pineapple shell. This fresh, protein-rich family dish brings tropical flair to the dinner table.
Heat 1 tablespoon of vegetable oil over medium-high heat in a large skillet or wok. Add the beaten eggs and scramble until just set, then remove to a plate.
Add the remaining oil. Stir-fry onions and carrots for 2 minutes over medium-high heat until onions are translucent and carrots begin to soften.
Increase to high heat; add shrimp and cook for about 2 minutes, stirring, until pink and firm. Immediately add curry powder and toss to coat evenly.
Add the cooked rice, using a spatula to break up clumps. Stir-fry for 2–3 minutes, ensuring even distribution of heat and incorporating the rice with the shrimp and vegetables.
Add pineapple chunks, peas, soy sauce, fish sauce, sugar, and white pepper. Toss well for another 2 minutes, allowing flavors to blend and pineapple to heat through. Return eggs and add cashews and half the green onion, mixing briefly. Serve garnished with remaining green onion.
