Hamburger and potato casserole layers seasoned ground beef with sliced potatoes and cheese for a hearty, budget-friendly family dinner. This protein-rich one-dish meal is simple comfort food at its best.
Preheat oven to 375°F and lightly grease a 9x13-inch casserole dish.
Peel and thinly slice the potatoes (about 1/8 inch thick) for even cooking; set aside.
In a skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is soft (about 7 minutes), stirring frequently.
Stir in salt, pepper, garlic powder, and paprika; mix thoroughly and remove from heat.
Layer half the sliced potatoes in the casserole dish, cover with half the beef mixture, then sprinkle 3/4 cup cheddar cheese. Repeat layers with remaining potatoes, beef, and top with the rest of the cheese.
Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15 minutes at 375°F until potatoes are tender and cheese is golden brown.
