Rinse the beef spleen under cold water, then pat dry with paper towels.
Heat 3 tbsp of olive oil in a heavy-bottomed skillet over medium heat until shimmering.
Slice the spleen thinly (about 1/4 inch) and sear the slices in batches, 2–3 minutes per side, until browned and slightly crisp at the edges. Regulate heat to prevent burning and use medium-high only as needed for quick searing.
Season the seared spleen immediately with sea salt and black pepper, tossing gently to coat while still hot.
Split the sandwich rolls and, while warm, stuff generously with hot spleen slices. Top each sandwich with ricotta or caciocavallo cheese. Serve immediately for the best balance of soft bread, creamy cheese, and rich meat.
