🎪 Pure childhood nostalgia in cookie form! Crumbl partnered with Mother's Cookies to bring back those iconic pink-and-white frosted Circus Animal cookies we all grew up with. The thick sugar cookie base is topped with sweet pink frosting and crunchy sprinkles that taste exactly like the original. If you loved those circus animal crackers as a kid, this collaboration hits all the right nostalgic notes.
Preheat oven to 350°F (177°C) and line two baking sheets with parchment. Cream the 1 cup butter and 4 oz cream cheese on medium-high until ultra smooth—this ensures extra soft, plush cookies like the real Crumbl version.
Beat in granulated sugar and powdered sugar until pale and fluffy, 3–4 minutes. Add eggs and vanilla; mix just until incorporated.
In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Stir dry ingredients into wet mixture on low, just until a thick dough forms. The cornstarch and cream cheese are your copycat secret weapons for that signature ultra-soft, melt-in-your-mouth crumb.
Scoop dough into 9 large balls (about 1/2 cup or 4–5 oz each). Flatten each ball slightly into a Crumbl-thick disc, then refrigerate all dough balls for at least 60 minutes. This chill helps prevent spreading—key to the chunky, bakery-style texture.
Bake chilled cookies 13–15 minutes until edges are set and centers barely look done (they will finish setting as they cool; this is how you replicate Crumbl’s almost-underbaked center!). Allow cookies to cool completely on pan.
Make the pink frosting: Beat soft butter and cream cheese until creamy, then add powdered sugar, vanilla, 1 tbsp milk, and pink food coloring. Beat on high 2–3 minutes, adding more milk for spreadable consistency.
Generously frost each cooled cookie with pink frosting in a thick layer to mimic Crumbl’s signature look. Press 1–2 Mother’s Circus Animal Cookies into each frosted cookie and shower with rainbow nonpareil sprinkles before the frosting crusts over.
Chill finished cookies for 20 minutes before serving to set the frosting—a Crumbl trick for clean, picture-perfect presentation.
