Drain the canned lychees, reserving the syrup. Chop half the lychee fruit and leave the rest whole for garnish.
In a small bowl, combine the gelatin powder with 1/4 cup of cool water (from the total cup) and let it bloom for 5 minutes until fully hydrated.
Meanwhile, pour remaining water, the reserved lychee syrup, and sugar into a saucepan. Heat gently over medium-low, stirring until the sugar dissolves but without letting the mixture boil.
Add the bloomed gelatin to the warm liquid, stirring constantly over low heat until completely dissolved and the mixture is clear. Remove from heat immediately to avoid overcooking the gelatin.
Stir in the fresh lime juice and the chopped lychee. Pour the mixture evenly into serving molds. Let cool to room temperature, then cover and refrigerate for at least 2 hours to set until the jelly is firm and delicate.
To serve, unmold the jelly onto dessert plates, garnish with whole lychees and mint leaves. Serve chilled for best texture and flavor.
