Modak is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
In a saucepan, bring 1.25 cups water, ghee, and salt to a simmer over medium heat. Once simmering, lower the heat and add rice flour in one go while stirring swiftly.
Mix well and cook for 2-3 minutes on low flame until a sticky dough forms. Remove from heat, cover with a lid or damp cloth, and let it rest for 10 minutes.
Meanwhile, heat another pan over medium flame and add grated coconut and jaggery. Stir constantly until the mixture thickens and the jaggery melts completely, about 5 minutes.
Sprinkle cardamom powder into the coconut-jaggery filling, mix well, and cook for another minute. Allow the filling to cool slightly for easier handling.
Knead the warm rice flour dough until smooth. Divide into 8 equal balls. Flatten each ball into a disc, place a spoonful of filling in the center, pleat and shape into a cone, sealing the top by pinching.
Place all shaped modaks on a greased steaming plate. Steam over medium-high heat for 10-12 minutes or until the outer cover turns glossy and slightly translucent. Serve warm.
