Julienned dried tofu and crisp celery are stir-fried in a light soy sauce. This vegetarian, high protein family side is healthy, crunchy, and supports weight loss or calorie deficit goals.
Julienne the dried tofu into thin strips about 2 inches long. Set aside.
Thinly slice celery stalks on a diagonal and julienne the carrot. Mince the garlic.
Heat a large nonstick pan or wok over medium-high heat and add sesame oil.
Add garlic and stir-fry for 20 seconds until fragrant without browning.
Add celery and carrot, stir-frying vigorously for 1 minute over high heat to retain crunch.
Add shredded dried tofu, pour in soy sauce, salt, and white pepper; toss everything together for 2–3 minutes, making sure tofu and vegetables are evenly coated.
Taste and adjust salt if needed. Stir-fry briefly until the celery is just tender but still crisp. Remove from heat, and serve warm or at room temperature.
