Wheat noodles are dressed in a sweet, aromatic sauce of brown sugar, soy, and sesame. This unique Chengdu snack offers an unexpected sweet-savory flavor that's unlike any other family noodle dish.
Bring a large pot of water to a rolling boil, and cook the fresh wheat noodles for 3–4 minutes until just tender. Drain promptly and toss with a little oil to prevent sticking.
While the noodles cook, finely mince the garlic cloves and two scallions; reserve scallion greens for serving.
In a bowl, combine dark soy sauce, light soy sauce, brown sugar, sesame paste, Chinkiang vinegar, chili oil, and salt. Whisk vigorously until fully smooth and aromatic.
Pour the sauce over warm drained noodles, and stir vigorously to ensure each strand is fully coated.
Top with minced garlic, scallion greens, and roasted peanuts. Serve immediately while noodles are glossy and fragrant.
