Eggs bathed in tangy tomatillo salsa verde are a bright, zesty Mexican breakfast. This high protein, keto-friendly dish is a fresh, healthy, family-friendly way to start the day.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add tomatillos, onion, serrano peppers, and garlic. Cook, stirring occasionally, until the tomatillos are softened and just starting to char, about 8 minutes.
Transfer the cooked vegetables to a blender. Add cilantro and 1/2 tsp salt. Blend until smooth, adjusting the seasoning as needed.
Wipe out the skillet and add another 1 tbsp olive oil over medium heat. Pour the tomatillo salsa back into the skillet and simmer for 5 minutes to deepen the flavors, stirring often.
Crack eggs one at a time into small bowls, then gently nestle them into the simmering salsa. Cover the skillet and cook on low heat, checking after 4–6 minutes: eggs should have set whites and runny yolks.
Season the finished eggs with remaining salt and black pepper. Serve directly in the skillet or spoon into bowls, topped with sliced avocado and extra cilantro for freshness.
