Tender pork ribs and daikon radish simmer together in a clear, nourishing broth. This protein-rich family soup is healthy, comforting, and a Cantonese home-cooking staple.
Rinse pork ribs thoroughly under cold water, then place them in a pot and cover with water. Bring to a vigorous boil over high heat for 5 minutes to remove impurities, then drain and rinse the ribs.
Add fresh water (8 cups) to the cleaned ribs, then add the ginger slices and scallion pieces. Bring to a boil over high heat, then reduce to low and skim off any foam for a clear broth.
Peel and cut daikon radish into thick chunks. Add daikon to the pot, and simmer covered on low heat for 1 hour.
Remove scallions and ginger after 1 hour. Continue simmering until pork ribs are tender and the radish is soft, about another 40 minutes. Adjust heat as needed to maintain a gentle simmer.
Season soup with salt and white pepper, stirring in gradually and tasting between additions. Serve hot, garnished with additional sliced scallions if desired.
