Pineapple Sheera is a rich, aromatic Indian dessert slow-cooked with ghee, sugar, and cardamom until luscious. This beloved sweet is a family tradition for festivals, celebrations, and special occasions.
Heat 2 tbsp ghee in a heavy-bottomed pan over medium heat. Add semolina and roast, stirring constantly, for 7–8 minutes until golden and aromatic.
Meanwhile, finely chop pineapple and simmer in 1 cup milk over medium-low heat for 10 minutes, stirring occasionally, until softened.
Push roasted semolina to the pan’s edge, add remaining 2 tbsp ghee and sauté cashews and raisins for 1 minute until cashews turn golden.
Add pineapple-milk mixture to the pan, stirring gently. Mix well, cover, and cook on low for 5–6 minutes until the semolina absorbs moisture.
Stir in sugar, cardamom powder, and a pinch of salt. Cook uncovered for 3–4 minutes, stirring until Sheera pulls together and turns luscious. Serve warm.
