Moong Dal Chilka is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse split moong dal thoroughly in cold water and soak for 30 minutes to improve texture and cooking speed.
Add soaked moong dal to a large saucepan with 3 cups water, turmeric powder, and salt. Bring to a boil, then reduce heat to medium-low and simmer uncovered for 18–20 minutes, skimming any foam off the top.
Dice tomato, onion, and green chili finely. When dal is tender but holds shape, stir in these vegetables and cook for another 5 minutes on low heat.
Heat ghee in a small skillet over medium-high. Once hot, add cumin seeds and sauté until they crackle and release aroma (about 1 minute).
Pour the cumin tempering into the cooked moong dal, stir well, and simmer for 2 more minutes to blend flavors. Serve hot with roti, rice, or as a hearty soup.
