Rinse the flattened rice (poha) in a colander under cold water for 30 seconds, then set aside to drain fully and soften.
In a large skillet, heat vegetable oil over medium heat. Add cumin seeds and sauté until aromatic, about 40 seconds.
Add chopped onions and green chili. Cook over medium heat until onions turn translucent and lightly golden, about 3-4 minutes. Stir in the grated ginger.
Mix in diced potatoes and green peas. Sprinkle salt, turmeric, and coriander powder. Cover and cook on low-medium heat for 7 minutes or until potatoes are almost tender, stirring twice to prevent sticking.
Add chopped tomato and red chili powder. Cook on medium heat until tomatoes break down, about 3 minutes. Add softened poha, gently mix in garam masala, and cook for 2-3 minutes on low heat until everything is well combined and heated through.
Turn off the heat. Drizzle lemon juice and fresh cilantro over the top. Fluff gently, adjust salt if needed, and serve hot.
