Pat duck breasts dry and score the skin in a crosshatch pattern, taking care not to cut into the meat. Season all sides generously with sea salt and freshly ground black pepper.
Heat a heavy skillet over medium heat. Place duck breasts skin-side down without any added oil, allowing fat to render slowly. Cook for 8–10 minutes, adjusting heat to maintain steady rendering but prevent burning.
Turn duck breasts over, add olive oil, smashed garlic cloves, and rosemary sprigs to the pan. Sear the meat side for another 3–4 minutes over medium heat.
