Morning pozole with hominy in a rich broth is a traditional post-celebration breakfast. This high protein, family-friendly dish is a fresh, warming way to start the day.
Cut the pork shoulder into large chunks, trimming excess fat, and season with salt and pepper.
Heat vegetable oil in a large pot over medium-high heat. Sear pork pieces on all sides until golden brown, about 8 minutes.
Add chopped onion and minced garlic to the pot, stirring and reducing heat to medium until onions soften, 3-4 minutes.
Meanwhile, seed and stem guajillo chilies. Toast them briefly in a dry skillet over medium heat until fragrant, 1-2 minutes, then soak them in hot water for 10 minutes. Blend with 1 cup of broth until smooth.
Return heat to a simmer, add the chili puree, remaining broth, cumin, and oregano to the pot. Simmer, covered, for 60 minutes over low heat until pork is tender.
Skim off any excess fat. Stir in the hominy, adjust salt to taste, and cook uncovered for another 20 minutes to meld flavors.
Just before serving, thinly slice radishes and shred cabbage. Cut limes into wedges.
Serve pozole hot, garnished with radish slices, cabbage, and fresh lime.
