Chicken cacciatore braised with tomatoes, peppers, and herbs in a rustic Italian-American sauce is a comforting family dinner. This mediterranean-inspired chicken dish is high in protein and full of robust flavor.
Pat chicken thighs dry and season both sides with half the salt and black pepper. Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat. Brown chicken skin-side down for 4–5 minutes per side, working in batches for best caramelization. Remove browned chicken and set aside.
Reduce heat to medium. Add remaining olive oil. Sauté sliced onion, red and green bell peppers, and sliced mushrooms for 5–7 minutes until softened and lightly golden. Add garlic and cook 1 more minute, stirring to avoid burning.
Deglaze the pan with dry white wine, scraping up browned bits. Let it simmer for 2–3 minutes to reduce slightly.
Stir in crushed tomatoes, dried oregano, basil, thyme, and remaining salt and pepper. Bring the sauce to a simmer, then nestle chicken thighs back into the sauce skin-side up. Cover with a lid.
Reduce heat to low. Simmer gently for 40 minutes, removing the lid for the final 10 minutes to allow the sauce to thicken and flavors to settle. Check chicken for doneness (juices run clear). Serve hot with fresh herbs if desired.
