Black beans slow-simmered with onion, garlic, and epazote until creamy and tender. This vegetarian, protein-rich staple is the foundation of healthy family meals across southern Mexico.
Rinse the dried black beans thoroughly under running water and pick out any debris.
Place the beans into a large Dutch oven with 8 cups of water, the whole peeled onion, garlic cloves (peeled), and epazote sprigs.
Bring the pot to a rapid boil over high heat, then immediately reduce to a low simmer.
Cover partially and simmer gently for 2.5–3.5 hours, stirring occasionally and adding more hot water if needed to keep beans submerged.
Once beans are creamy and tender, remove epazote and onion, then stir in kosher salt; simmer 10 minutes more, then serve.
