Fried Modak is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
In a mixing bowl, combine all-purpose flour, a pinch of salt, and 1 tablespoon of ghee. Mix well, then gradually add water to form a smooth, pliable dough. Cover and let rest for 20 minutes.
Heat 1 tablespoon ghee in a pan over medium heat, add grated coconut, and sauté for 2-3 minutes. Add jaggery and cook, stirring constantly, until melted and the mixture thickens (about 5 minutes). Remove from heat and stir in cardamom powder. Allow to cool completely.
Divide the dough into 12 equal balls. Roll each into a small disc, about 3 inches in diameter, keeping the edges thinner than the center.
Place a spoonful of the cooled coconut-jaggery filling in the center of each disc. Carefully pleat and gather the edges, pinching together at the top to form the classic modak shape. Seal well to prevent the filling from leaking during frying.
Heat oil in a deep pan over medium heat to 350°F. Fry modaks in batches, turning occasionally, until golden brown and crisp on all sides, about 5-7 minutes per batch. Drain on paper towels and allow to cool slightly before serving.
