Seasoned beef burrito bowls with rice, beans, fresh salsa, and all the fixings make a customizable family dinner. High in protein and perfect for meal prep or a satisfying calorie deficit-friendly bowl.
Heat the olive oil in a large skillet over medium-high heat. Once shimmering, add ground beef and break it up with a spatula.
Cook the beef, stirring frequently, until browned and cooked through (about 6–8 minutes). Drain any excess fat.
Reduce heat to medium and add chili powder, cumin, garlic powder, salt, and black pepper to the beef. Stir well and sauté 2 more minutes to allow the spices to bloom.
While beef cooks, prepare bowls: layer cooked rice, black beans, and chopped romaine lettuce as the base of each bowl.
Top with seasoned beef, sprinkle with shredded cheddar cheese, and scatter cherry tomatoes, diced red onion, and fresh cilantro on top.
Drizzle with lime juice just before serving to brighten flavors and keep all ingredients vibrant. Serve immediately or portion into containers for meal prep.
