Corn tortillas stuffed with shredded chicken, rolled tightly, and fried until crispy. These protein-packed, freezer-friendly tacos make a family favorite topped with fresh lettuce, crema, and salsa.
In a large bowl, toss cooked shredded chicken with salt, black pepper, garlic powder, and onion powder until evenly seasoned.
Warm the corn tortillas in a dry skillet over medium heat for 15-20 seconds per side to make them pliable.
Spoon about 1/4 cup of the seasoned chicken onto each tortilla, then tightly roll into cigar shapes with the seam side down.
Pour canola oil into a large skillet to 1/2-inch depth and heat over medium-high until shimmering (350°F).
Carefully place tacos seam-side down in batches and fry, turning occasionally, until all sides are golden and crisp (about 2–3 minutes per batch).
Transfer fried tacos to a paper towel-lined plate to drain excess oil.
Serve immediately, topping each taco with shredded lettuce, a drizzle of Mexican crema, and spoonfuls of salsa.
