Place eggs in a saucepan, cover with cold water, and bring to a boil over medium-high heat. Once boiling, lower to medium and cook for 8 minutes.
Transfer boiled eggs to an ice water bath immediately for easy peeling. Peel and set aside.
In a clean pot, combine 3 cups water, soy sauce, dark soy sauce, brown sugar, five spice powder, star anise, half onion (sliced), and ground black pepper. Bring mixture to a simmer over medium heat.
Add the peeled eggs to the simmering marinade and reduce heat to low. Cover and gently simmer for 35 minutes, turning eggs occasionally for even coloring.
Turn off the heat and let the eggs cool in the braising liquid for at least 30 minutes (or overnight in the fridge) to deepen the flavor before serving.
