Thick daikon rounds are braised in a savory broth until translucent and meltingly tender. This vegetarian, low calorie family side is gentle, healthy, and comforting.
Peel the daikon radish and cut it into thick, even rounds about 1 inch high for best texture.
In a wide saucepan, add the daikon rounds and enough water to cover; bring to a boil over high heat, then simmer for 5 minutes. Drain well.
Return daikon to the pan. Add 2 cups vegetable broth, soy sauce, mirin, and sugar. Bring the mixture to a gentle simmer over medium-low heat.
Cover and braise the daikon for 25–30 minutes, gently turning once halfway, until daikon is translucent and very tender.
Finish by adding sesame oil and sliced scallions. Simmer uncovered for 2–3 minutes to allow flavors to meld and moisture to reduce slightly. Serve hot.
