Heat the vegetable oil in a large skillet over medium heat. Add the chorizo and cook, breaking it apart with a spatula, until cooked through and lightly crisp, about 6–7 minutes.
Add the chopped onion to the skillet. Sauté for 3–4 minutes, stirring occasionally, until the onion is translucent and soft.
Mix in the minced garlic and ground cumin; cook for 1 minute, stirring constantly to avoid burning and release aromas.
Add the cooked pinto beans to the skillet. Reduce heat to medium-low and gently mash the beans using a potato masher or the back of a spoon, adding 1–2 tbsp water as needed for a creamy consistency.
