Kaju katli is a delicate, diamond-shaped Indian sweet made from finely ground cashews and sugar, finished with edible silver foil. This premium dessert is India's most gifted sweet during Diwali and family celebrations.
Grind raw cashews in a food processor until they form a fine, powdery flour. Sieve to remove any larger pieces for an even texture.
In a nonstick pan over medium heat, combine granulated sugar and water. Stir and heat until the sugar fully dissolves, forming a syrup. Continue boiling until a one-string consistency develops (about 3–4 minutes).
Reduce the heat to low. Add the cashew powder and cardamom powder to the syrup. Stir continuously to avoid lumps and ensure an even mixture.
Cook on low heat, stirring and scraping down the sides, until the mixture thickens and leaves the sides of the pan (about 10–12 minutes). Add ghee in the last 2 minutes for a smooth finish.
Turn off the heat, let the mixture cool for 5 minutes, then transfer onto parchment paper. Knead gently until smooth. Flatten with a rolling pin to about 1/4 inch thick, lay edible silver foil on top, and cut into diamond shapes after cooling completely.
