Heat 1 tbsp olive oil in a heavy pot over medium-high heat. Brown the pork shoulder pieces on all sides in batches, then transfer to a plate.
In the same pot, add the remaining olive oil, then sauté the onion until translucent, about 3 minutes. Add garlic and cook for 1 more minute.
Add diced tomatoes and cook on medium until softened, stirring occasionally for 5 minutes. Remove from heat.
Toast the guajillo and ancho chiles on a dry skillet over medium heat for 2 minutes, pressing gently to release aroma. Place chiles in a bowl with 1 cup hot chicken broth to soak for 10 minutes.
Blend the soaked chiles with soaking liquid, sautéed tomato-onion mix, oregano, salt, and black pepper until smooth.
Return pork to the pot, pour over the blended chile sauce, and add the remaining chicken broth. Bring to a boil, then reduce to low, cover, and simmer for 45 minutes.
Add sliced nopales, stir gently, re-cover, and simmer for an additional 30 minutes or until pork is tender and nopales are cooked through.
Taste and adjust seasoning if necessary before serving warm.
