Icy Sicilian granita scooped into a split brioche is the island's iconic summer breakfast. This refreshing mediterranean tradition is a family favorite on hot mornings.
In a medium saucepan over medium heat, combine water, granulated sugar, and lemon zest. Stir constantly until sugar is fully dissolved, about 2-3 minutes. Remove from heat and let cool to room temperature.
Stir in fresh lemon juice to cooled syrup. Pour mixture into a shallow metal baking dish for rapid freezing and even ice formation.
Place dish in freezer. After 30 minutes, use a fork to scrape and break up ice crystals, then return to freezer. Repeat scraping every 30 minutes for 2.5 to 3 hours for fluffy, granular ice.
