Aromatic basmati rice infused with cardamom, cumin, cinnamon, and cloves — bariis is the fragrant Somali staple that transforms any iftar spread into something extraordinary.
Rinse the basmati rice under cold water until the water runs clear; soak for 20 minutes and drain well.
Heat vegetable oil in a large heavy-bottomed pot over medium heat. Add sliced onions, sauté for 8–10 minutes until golden and lightly caramelized.
Stir in the cumin seeds, cardamom pods, cloves, and cinnamon stick; cook until fragrant, about 1 minute, to release their aroma.
Add grated carrot and raisins, sauté for 2 minutes until carrots soften slightly and raisins plump up.
Add drained rice and gently stir to coat each grain with the spiced oil. Pour in water and add salt and black pepper.
Bring to a boil over high heat, then reduce to low, cover tightly, and simmer for 18–20 minutes until rice is tender and water is absorbed.
Turn off the heat and let the rice rest, covered, for 10 minutes to let the flavors meld. Fluff gently with a fork before serving.
