Prepare the dough: In a large bowl, combine bread flour, instant yeast, sugar, salt, water, olive oil, and softened butter. Shape and assemble: Remove dough from the fridge, let it come to room temp for 30 minutes, then divide into two equal pieces. Flatten each into a 12-inch circle. Transfer to two oiled, dark cake pans for even browning and a crispy bottom.
