Classic chicken enchiladas with your choice of red or green sauce, topped with cheese and crema. A high protein family staple that never goes out of style for weeknight dinners.
Preheat oven to 375°F (190°C). Lightly oil a 9x13-inch baking dish and set aside.
Heat vegetable oil in a skillet over medium heat. Warm each tortilla for about 10 seconds per side until pliable; cover with a towel to keep moist.
In a bowl, combine shredded chicken, 1 cup enchilada sauce, half the cheese, salt, and black pepper. Mix until evenly coated.
Spoon the chicken mixture evenly onto each tortilla, roll them up snugly, and place seam-side down in the prepared dish.
Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure to cover all surfaces. Sprinkle the remaining cheese on top.
Bake uncovered for 18–22 minutes, until the cheese is melted and bubbling and edges are just golden; avoid overbaking to keep tortillas moist.
Garnish hot enchiladas with Mexican crema and chopped cilantro just before serving.
