Soft Sicilian brioche with a distinctive topknot, traditionally paired with granita for breakfast. This beloved mediterranean pastry is a family morning ritual across Sicily.
In a small bowl, warm the milk to lukewarm (not hot) and dissolve the active dry yeast with 1 tablespoon sugar. Allow to stand until frothy, about 10 minutes.
In a stand mixer bowl, combine flour, remaining sugar, salt, lemon zest, orange zest, and vanilla extract. Lightly beat the eggs and add them with the frothy yeast mixture.
Knead the dough on medium speed for 5 minutes, then add the softened butter one tablespoon at a time, continuing to knead for 10 minutes until the dough is smooth and elastic.
Cover the bowl and let rise in a warm place until doubled in volume, about 2 hours. Punch down the dough, cover, then refrigerate for at least 4 hours or overnight for deeper flavor.
Divide dough into 8 large balls and 8 small balls. Shape each large ball, flatten slightly, and make a small well on top. Place a small ball into each well to create the tuppo (topknot). Transfer to a parchment-lined baking sheet.
Cover and let rise until puffy, about 1 hour. Preheat oven to 350°F. Brush brioche gently with beaten egg for gloss.
Bake for 20–22 minutes, rotating the tray halfway, until golden brown on top. Cool slightly before serving with granita if desired.
