Khichdi is India's ultimate comfort food—a one-pot meal of rice and lentils cooked with gentle spices. This high protein vegetarian dish is DASH-friendly, easy to digest, and perfect for healthy family meals.
Rinse basmati rice and split yellow moong dal under cold water until the water runs clear; drain well.
In a medium pot, heat 1 tbsp ghee over medium heat, stir in cumin seeds, and let them sizzle for about 30 seconds until fragrant.
Add minced ginger and sauté for 1 minute, then add diced carrots and green peas, cooking for another 2 minutes for a light sauté.
Add the rinsed rice and moong dal to the pot; stir to coat them well with the ghee-spice mixture.
Mix in turmeric powder and salt, pour in 4 cups water, bring to a boil over high heat, then reduce to low and cover; simmer gently for 25–30 minutes, stirring occasionally to prevent sticking.
Once the khichdi is soft and creamy, taste and adjust salt if needed; let it rest covered for 5 minutes before serving for best texture.
