Karela Sabzi is a light, nutritious Indian vegetable dish that's naturally low in calories and gentle on digestion. This healthy vegetarian preparation is ideal for weight loss, bariatric diets, and family everyday meals.
Wash and slice the karela lengthwise, remove seeds, then slice thinly. Sprinkle lightly with salt and let rest for 15 minutes to draw out bitterness; rinse and pat dry.
Heat 2 tbsp canola oil in a skillet over medium flame. Add cumin seeds and wait until they sizzle, about 30 seconds, to release aroma.
Add sliced onions and sauté on medium heat until translucent but not browned, around 3-4 minutes. Stir in turmeric powder and coriander powder.
Add the prepared karela and cook uncovered for 7-8 minutes, stirring occasionally to prevent sticking and allow moisture to evaporate.
Mix in chopped tomato, salt, and red chili powder. Cover and cook on low heat for 12-15 minutes until karela is tender, stirring every few minutes for even cooking. Remove lid for final 2 minutes to let excess moisture escape.
