A fruity mole sauce made with dried plums, chiles, and spices for a sweet-savory balance. This unique family dish blends fruit and heat in a traditional Mexican sauce tradition.
Stem and seed the ancho and pasilla chiles, then lightly toast them in a dry skillet over medium heat for 2 minutes until fragrant. Transfer to a bowl and soak in hot water for 20 minutes.
In the same skillet, add 1 tbsp vegetable oil and sauté almonds, torn corn tortillas, onion, and garlic over medium heat for 5 minutes until the mixture is golden and aromatic.
Add tomatoes and dried plums to the skillet. Cook, stirring, for 3 more minutes until the tomatoes soften and prunes plump.
Drain chiles and blend together with the skillet mixture, chicken broth, cinnamon, cocoa powder, salt, and sugar until completely smooth. Work in batches if needed.
Heat 1 tbsp oil in a saucepan over medium-low. Pour in the blended sauce. Simmer, stirring often, for 20–25 minutes until thickened and flavors meld. Adjust seasoning to taste and serve warm.
