Tender straw mushrooms are quickly wok-tossed with garlic and oyster sauce. This vegetarian, low calorie family side has a delicate flavor unique to Southeast Asian-Chinese cooking.
Rinse and drain the straw mushrooms thoroughly; halve any large pieces for even cooking.
Peel and mince the garlic cloves; finely slice the green onions.
Heat the vegetable oil in a wok over medium-high until shimmering, then add the minced garlic. Stir-fry for about 30 seconds until fragrant, being careful not to brown.
Increase the heat to high, add straw mushrooms, and toss for 1–2 minutes. Stir constantly to ensure even heat and prevent moisture buildup.
Add oyster sauce, soy sauce, sugar, and white pepper. Stir-fry rapidly for another 2 minutes, letting the sauces reduce and coat the mushrooms.
Sprinkle in the green onions, toss quickly, and remove from heat immediately to preserve their color and crunch.
Transfer to a serving plate and enjoy hot as a side or vegetarian main.
