Tangy fermented kimchi and rice are wok-fried until slightly crispy, often topped with a runny egg. This Korean-Chinese fusion family dish is packed with probiotics and delivers bold, fresh flavor.
Heat 1 tbsp neutral oil in a large skillet or wok over medium-high heat. Once shimmering, add chopped onion and stir-fry for 2 minutes until translucent.
Add kimchi (with its juices) to the pan and sauté for 3–4 minutes, stirring often, until fragrant and some moisture evaporates.
Stir in the cooked rice, breaking up any clumps. Push mixture to the side, add the remaining 1 tbsp oil, and mix fully. Allow rice to sit undisturbed for 1–2 minutes to develop crisp edges.
Mix in gochujang, soy sauce, and ground black pepper. Stir well to coat everything evenly, continuing to fry for 2 more minutes.
Push the rice mixture to the side, crack in eggs, and scramble gently until just set but still slightly runny. Fold into the rice.
Drizzle sesame oil and fold in chopped scallions. Top with toasted sesame seeds and serve immediately.
