Soak dried shiitake mushrooms in warm water for 30 minutes until softened. Slice the stems off and set aside.
Blanch the pork ribs: In a large pot, cover ribs with water, bring to a boil over high heat, and boil for 3 minutes. Drain and rinse the ribs under cold water to remove impurities.
