Mushroom Matar is a flavorful Indian vegetable preparation that celebrates fresh, seasonal produce with bold spices. This healthy vegetarian dish is perfect for family dinners, DASH diet, and everyday clean eating.
Heat vegetable oil in a large skillet over medium heat. Add cumin seeds and sauté until they crackle and become fragrant.
Add chopped onions and cook, stirring frequently, until they turn golden brown—about 5–7 minutes. Don't rush; proper caramelization draws out sweetness.
Stir in minced garlic and ginger, cooking for 1 minute. Add chopped tomatoes, ground coriander, turmeric, salt, and black pepper. Cook over medium heat until tomatoes soften and oil begins to separate, about 5 minutes.
Add sliced mushrooms and sauté on medium-high heat for 3–4 minutes, allowing them to release moisture and concentrate flavor. Avoid covering the pan to prevent sogginess.
Add green peas and garam masala. Reduce heat to low, cover, and simmer for 8–10 minutes until peas are tender and mushrooms are cooked but retain their bite. Stir occasionally to prevent sticking.
