Pearl barley risotto with smoky speck from Trentino-Alto Adige is a hearty alpine dish. This high protein mediterranean meal is rich in fiber and makes a satisfying family dinner.
Heat 2 tbsp olive oil in a large heavy-bottomed pan over medium heat. Add the diced speck and sauté until slightly crisp and fragrant, around 3 minutes.
Add finely chopped onion, carrot, and celery to the pan. Continue to cook over medium heat for 5–6 minutes, stirring occasionally, until vegetables soften and release moisture.
Stir in the pearl barley and cook for 2 minutes, letting each grain toast lightly and absorb aromatics—do not rush this step as it builds texture.
Pour in 4 cups of warm chicken broth, season with salt, pepper, and thyme. Bring to a gentle simmer, then reduce the heat to low. Cover and cook for 28–32 minutes, stirring every 8 minutes to manage moisture and prevent sticking.
Check barley for doneness—it should be creamy and tender, never mushy. Remove from heat and fold in grated parmesan. Taste and adjust seasoning, then serve immediately for best texture.
