Crispy chickpea fritters seasoned with herbs are Italy's answer to falafel. Vegetarian, high protein, and mediterranean, these are perfect for clean eats, pcos diet, and healthy family snacking.
In a food processor, pulse chickpeas, torn bread, and garlic until a coarse mixture forms—do not over-process; texture is important.
Add the egg, parsley, Parmesan cheese, oregano, lemon zest, salt, and pepper to the food processor. Pulse until just combined; mixture should hold together but remain slightly chunky.
With wet hands, shape the mixture into 12 even balls (about golf-ball size). Chill on a plate in the refrigerator for 15 minutes to firm up.
Heat 2 tbsp of olive oil in a large nonstick skillet over medium heat. When oil shimmers but isn’t smoking, add fritters in batches, without overcrowding.
Cook fritters for 3–4 minutes per side, turning gently when golden-brown crust forms. Adjust heat as needed to avoid burning, and repeat until all are cooked. Drain on paper towels and serve warm.
